Chocolate fudge before shaping into cubes

Delicious fudge, easy to digest, fairly low saturated fat.


100g dark chocolate (e.g. sugar-free from Holland & Barratt, many are non-dairy)
100g Vitalite, veg or soy margarine (the organic one has a good flavour)
400g icing sugar [or 40-50g sweetener (like Candarelle) – use 10% of the weight of icing sugar, this stuff is very light!]
80-100 ml soya cream
drop vanilla extract/essense
30g ground almonds or hazelnuts
10g cocoa powder
(optional) raisins, dried cranberries or frozen raspberries


  1. Melt the chocolate and marg carefully.
  2. Stir in the vanilla and cocoa, and gradually add the sugar and cream a bit at a time until it stiffens. Add the nuts and fruit towards the end.
  3. Place in a greased container in the fridge for two hours.
  4. Cut into cubes and dust with more cocoa powder.
