Delicious fudge, easy to digest, fairly low saturated fat.
100g dark chocolate (e.g. sugar-free from Holland & Barratt, many are non-dairy)
100g Vitalite, veg or soy margarine (the organic one has a good flavour)
400g icing sugar [or 40-50g sweetener (like Candarelle) – use 10% of the weight of icing sugar, this stuff is very light!]
80-100 ml soya cream
drop vanilla extract/essense
30g ground almonds or hazelnuts
10g cocoa powder
(optional) raisins, dried cranberries or frozen raspberries
- Melt the chocolate and marg carefully.
- Stir in the vanilla and cocoa, and gradually add the sugar and cream a bit at a time until it stiffens. Add the nuts and fruit towards the end.
- Place in a greased container in the fridge for two hours.
- Cut into cubes and dust with more cocoa powder.
