big beet salad

a salad in six parts

Took nearly an hour to make two portions, but tasty and healthy.

Clockwise from top:

ONE – Beetroot salad

grated raw beetroot
grated ginger
grated carrot
grated swede
chuncks of basil tofu and rosso tofu
sesame seeds
toasted sesame oil
chopped chives
chilli sauce


sliced cucumber


avocado pieces coated in roasted sesame, pumpkin and sunflower seed mix

FOUR – Relish

tamarind and date paste
tomato purée
e.v. olive oil
chopped basil
diced tomatoes
ground black pepper
crushed garlic


boiled quinoa


soya yogurt
whole grain mustard
tobasco sauce
