enchilada (not quesadilla, oops)

The best enchilada I’ve ever eaten…

Fried red onion, tin of refried beans, Ragu traditional, some fresh Tesco salsa, grated red Cheezly in the sauce, inside and over corn tortillas, topped with more grated Cheezly and sliced avocado and baked for 10 minutes.

You wouldn’t know it was non-dairy after the cooking. Well, unless I can’t tell any more! But it was amazing, I was stamping my feet with joy while eating it. (ahem)
