Leftovers on toast

French bread, tofu and dressed salad-y goodness

What to do with some bits and bobs in the fridge?  Here is today’s mix.

Top: Grilled French stick, each half has a different dressing.

Right: Grilled tofu.

Bottom: Mixed salad.

The first dressing on the bread (bottom half) was a mix of

  • hot pepper sauce,
  • tomato purée,
  • lime juice,
  • e.v. olive oil,
  • coriander (fresh, finely chopped).

Mixed in the same bowl without washing, the second dressing (top half of bread) was

  • toasted sesame oil,
  • cider vinegar,
  • ground garlic and chilli flakes (flavoured salt, I suppose).

The salad consists of

  • avocado,
  • tomato,
  • cucumber,
  • golden pea shoots

and was dressed in

  • white wine vinegar,
  • chives (fresh chopped),
  • poppy seeds.
