Pumpkin and lentil soup

Served with parsnip chips, nut roast and cherry tomato

Boxing day means making food from left-overs in my mind, so this soup is just that.

Pumpkin, red lentils, potatoes, carrot, onion, tin of tomatoes, bouillon powder, gravy granules, soya cream, all blended together at the end.

Served with seasoned roasted parsnip chips and the remains of the nut roast.
