Udon noodles and vegetables

I finally went in the Chinese/Asian supermarket near where I used to work, and bought noodles, kimchi and mochi.  Here is my (unauthentic but what the heck) noodles and mixed vegetables, stir fried with water to make it healthier. (The mochi was for dessert.)

Ingredients

  • udon noodles
  • red cabbage, sliced
  • red, green and yellow peppers, finely sliced
  • sliced water chestnuts
  • sliced bamboo
  • crushed garlic
  • 1 tsp Chinese 5 spice
  • squirt of lemon juice
  • shoyu soy sauce
  • kimchi

Method

  1. Slice the veg, stir fry in a little water (not oil) with the spices.
  2. Boil the noodles for 2-3 minutes.
  3. Serve with kimchi.
