Still in the oven dish

I’ve written about enchiladas not once but twice before, but I love them so much I’m going to do it again!

This time, the sauce was made from fried leek, yellow pepper, fresh tomatoes, passata and cubed garlic tofu, with a little pepperjack Cheezly grated over the top.
