Scrambled tofu med

Served on toast with carrot and cashew salad

A tasty brunch, this is Andrew’s scrambled tofu recipe made a bit Mediterranean-style, with a white chilli sauce of mine, served on toast with salad.

I don’t recall the ingredients exactly, I was half asleep at the time! Please see this as a guide or inspiration rather than a proper recipe.

Ingredients — scrambled tofu

  • packet of firm plain tofu, mashed with a fork
  • sesame oil
  • tomatoes, diced (add at the end)
  • mixed Mediterranean herbs (add at the end)
  • garlic, crushed
  • “Lazy Garlic”
  • black pepper, ground

Ingredients — white chilli sauce

  • soya yogurt
  • wholegrain mustard
  • mojo rojo or similar red pepper chilli sauce
  • olive oil
  • garlic, dried ground
  • black pepper, ground


  1. To make the sauce, stir all those ingredients together. (The ingredients are listed in decreasing order of proportion.)
  2. To make the tofu, mash it then gently fry it in the oil, then add the seasonings.  Finally add the tomato and herbs a bit later serving.
  3. Serve on wholemeal toast with a grated carrot and cashew salad and mixed leaves.
