Saturday platter

Seven types of yum.

A selection of hot and cold salads for eating with my family.

Clockwise, from left.

Carrot and apple slaw

Made from the following.

  • grated carrot
  • grated apple
  • pine nuts
  • poppy seeds
  • dressing of:
    • cider vinegar
    • tsp sesame oil
    • tsp lemon juice
    • ground cinnamon

Beetroot and kohlrabi, spiralised

Dressed with rice mirin, sesame oil and chilli.

Long grain rice

Made with the following.

  • red and white onion, fried with garlic and grated ginger
  • peas
  • cashews
  • roasted seeds and nuts (sesame, pumpkin, sunflower and cashew)


Made from the following, blended.

  • 2 cans chick peas, rinsed and drained
  • tahini
  • sunflower oil
  • crushed garlic

Red and white sauce

Made from a mix of the following.

  • tomato purée
  • egg-free mayo
  • whole grain mustard
  • “lazy” garlic
  • mustard
  • olive oil

Basil pesto

A dairy-free variety.
